Punch Buggy Pancakes

Pancakes made from the ingredients in your pantry not only taste great, they're fun and easy to make! For a little variety, stir in a 1/2 cup of fresh chopped fruit--apples, bananas, peaches or pears. Or try 1/2 cup of frozen berries--thawed and well drained.

Read Pancakes, Pancakes by Eric Carle. Kids will get a thrill as they join Jack when he starts from scratch--grinding flour, gathering the eggs, milking the cow, and churning the butter--to make his breakfast pancake.

TIME SAVER TIP: Use a pancake mix and add buttermilk as the liquid.

Makes nine 4-inch pancakes.

Prep time: 10 minutes

Ingredients:

1 egg
1 cup all-purpose flour
3/4 cup milk or buttermilk
1 TBSP granulated sugar
2 TBSP vegetable oil
3 tsp. baking powder
1/4 tsp. salt


This recipe can be done completely by the child. Parents may want to observe younger children and assist where needed.


1. CHILD STEP: Crack egg into medium bowl. Beat with hand beater until fluffy.
2. CHILD STEP: Measure remaining ingredients and add them to the beaten egg. Mix until the mixture is smooth.
PARENT STEP: Add 1 to 2 TBSP of milk if you want thinner pancakes.
3. PARENT STEP: Heat griddle or skillet over medium heat, grease if necessary.
4. PARENT STEP: Pour a scant 1/4 cup of batter onto griddle or skillet for each pancake. For fun, make letter or animal shapes*. Cook until puffy and brown around the edges. Turn and cook on other side until golden brown. If you feel that your child is old enough, have them assist you with turning the pancakes.

PARENT: Pour batter into the shape of a fish
CHILD: Sprinkle with colored sugar or sprinkles.
PARENT: Flip pancake and voila....you have a rainbow fish!
